Vaangi Bath
Ingredients
• 4 tbsp oil
• ¾ tsp mustard seeds
• ½ tsp urad dal
• ½ tsp chana dal
• 1 dried red chilli
• few curry leaves
• 1 green chilli, slit lengthwise
• 15-20 pieces of brinjal / eggplant, 1 inch pieces

• 3 tsp groundnuts
• ¼-½ cup tamarind extract
• 2 tbsp vangi bhath masala powder
• small piece of jaggery
• salt to taste
• ¼ tsp turmeric powder
• 1 bowl, cooked rice
• few coriander leaves, finely chopped

Instructions(1 cup =255 ml)
1. firstly, in a large kadai, take 4 tbsp of oil.
2. furthermore, add the tempering ingredients like mustard seeds, urad dal, chana dal, red chilli and curry leaves.
3. allow them to splutter. and then add green chilli.
4. after that, add chopped brinjal. to avoid de-colouration and to remove the bitterness, soak brinjals in water.
5. also add groundnuts.
6. saute and fry them till they shrink in size.
7. furthermore, add tamarind juice.
8. also add 2 tsp of vangi bhath masala, jaggery, salt and turmeric powder.
9. give a good mix and cook till the tamarind water is evapoartaed.
10. furthermore, add cooked rice and gently mix the rice with the masala.
11. also add few coriander leaves.
12. finally, serve vangi bhath with raita.
